Brooklyn Black Ops with Pleasant Ridge Reserve. Nutty, grassy and complex, this raw cow’s milk cheese is made in Dodgeville, Wisconsin and it has won the Best in Show award at the American Cheese Society annual confab three times, more than any other cheese. Its nuttiness and grassiness will pair nicely with roasty, whiskey-like overtones of the Black Ops.
